Dom Pérignon is always a vintage wine and can only be produced from the grapes of a single year. It takes no fewer than eight years of patient elaboration to reach it’s aesthetic ideal. In the darkness of the cellars, inside the bottles, the wine has gone through an active transformation in contact with the years, reaching the harmony that forever signs a Dom Pérignon. It is complete, seamless, tactile.
2003 perfectly illustrates Dom Pérignon’s conception of taking risks. This is not recklessness, but quite to the contrary an approach inspired by intuition. A spark ignited when knowledge is applied to face of the reality of a situation. The spark that leads to unexplored technical paths to reach a precisely articulated aesthetic ideal. This is exactly what Dom Pérignon did in 2003. For the first time, the juice was allowed to oxidize and darken in the press, thus lightening the overly imposing tannic structure. Then the Pinot Noir was increased to previously untried proportions in the assemblage in order to balance the Chardonnays, which had a character that was more Burgundy than Champagne. Dom Pérignon was one of very few houses to interpret 2003. And now Dom Pérignon Vintage 2003 Plénitude 2 offers a chance for a new experience of this vintage, a rereading of history.
"A wonderful and unique wine from an equally unique vintage filled with oxidation-preventing phenols. I have always been a faithful defender of this wine. It will forever be unique and different with a higher density and concentration than any other Dom Pérignon. Every minute a new sequence of aromas that dominates appears. In some sips the gray toasted and classic notes dominate, next time iodine and oyster shell take over to let the richly candied fruit of peach, mango and apricot jam take over in a third wave. What makes me recognize the vintage are the notes of licorice, black truffle, ash, tar, salt and asphalt. The structure is monumental and muscular with a wonderful interplay between dynamics, rhythm and intensity. In the taste, the same dark notes emerge as in the aroma, but the fruit is in this P2 stage more floral and spicy with a hint of lemongrass and mint where the normally disgorged version breathes more nougat, mint chocolate and orange." 95-96 pts, Richard Juhlin
"This is a very thick, dense Dom Pérignon with layers of ripe fruit. Dried apple, pineapple and pie crust with some nougat undertones. Dense and layered with chewy tannins and a juicy finish. Umami undertone. This has the highest percentage of Pinot Noir ever. 15 years on the lees in bottle. 62% Pinot Noir and 38% Chardonnay. Drink or hold." 98 pts, James Suckling
"Every Dom Pérignon vintage is built to eventually become a Plénitude 2 and Plénitude 3 and so is the 2003! It was such a challenging and unprecedentedly hot year. Yet there is nothing heavy in Dom Pérignon of the year. The nose is stunningly toasty with sweet, vanilla laden fruit, hay, juniper, cookie dough and cream. On the palate it is exuberant, round and textured with a notion of firming phenolics of a hot year on the back palate. The time on lees seems to have created some extra roundness and delicious sweetness to the fruit. Finely bubbling energetic palate finishing on a pure mineral freshness." 96-97 pts, Essi Avellan MW

'Express Delivery' (Free Next Day Delivery) is available for orders over £75 placed before 1pm Monday to Thursday. Orders over £75 but placed after 1pm will still benefit from 'Fast & Free Delivery', and will revert to an estimated 1-3 working days. For orders under £75, 'Fast Delivery' is charged at £12.50, arriving in an estimated 1-3 working days.
London Same Day Delivery is available to most London postcodes as listed in our T&Cs, if ordered by 11am Monday to Friday (excluding public holidays). For orders over £75 London Same Day, delivery is charged at £15. For orders under £75 London Same Day, delivery is charged at £27.50. If ordered after 11am, you will receive your order on the next working day. We may be able to organise a speedy courier for you, so please call or email us if you have special requests. Saturday Delivery costs £30. This option is available to all UK mainland postcodes for orders placed between 1pm on Thursday and 1pm on Friday. This is optional at checkout, to be chosen in place of our standard 1 – 3 working day service. If you specifically need to place an order for Saturday delivery outside of the above times, please contact us at firstname.lastname@example.org and we will see if we can arrange this for you.
Our Club Offers may take longer to ship, as we collect all of our members’ orders together before ordering them from the winemaker. The expected delivery timelines for each product should be specified on the product page. Otherwise, please contact us for the information.
