What to drink with... green salad.
Gone are the days when a Green Salad meant a few leaves of round lettuce. Then came Cos or Romaine, Raddiccio, Endive, and Fennel. Now we have young leaves of spinach, watercress and rocket to add a little spiciness. So which wine? With a vinaigrette, try our special Sicilian Tenuta di Fessina A’Puddara Etna Bianco made from the local Carricante grape or its neighbour Tannu Bianco: a blend of Chardonnay or Grillo. A creamy dressing will stand up to our Les Fleurs de Montblanc Chardonnay from the Languedoc-Roussillon or one of our rosés. If the salad is a mere accompaniment to the main dish, then go with the most intense flavour: steak and salad, pick a red.
