Dom Pérignon is always a vintage wine and can only be produced from the grapes of a single year. It takes no fewer than eight years of patient elaboration to reach it’s aesthetic ideal. In the darkness of the cellars, inside the bottles, the wine has gone through an active transformation in contact with the years, reaching the harmony that forever signs a Dom Pérignon. It is complete, seamless, tactile.

For each vintage and from its inception, a limited number of bottles are set aside in the cellars, predestined for longer maturation. With this extra time, the inner activity in the bottle increases. The yeast transfers its energy to the wine…a mysterious transfer of life. Elevated to new heights, it unfurls across every dimension – wider, deeper, longer, more intense and gifted further with a new, extended longevity. Dom Pérignon Plénitude 2 is precise, intense, vibrant.

"A Champagne that has turned to a very fine texture with dried pineapple and lemon character. Medium to full body, complex and flavorful palate. Shows length and beauty. Pie crust, cooked apple and lemon rind continue on the finish. A truly great 2000 with a combination of finesse and strength. It’s very, very minerally to a point of sea salt. Although, perhaps not quite as complex or structured as the very best P2s, the 2000 is wonderfully alluring. Interestingly, in 2000, the Blanc and P2 are not as different as they typically are. "The 2000 Dom Pérignon P2 is drinking beautifully, wafting from the glass with complex and gently reductive aromas of iodine, lemon oil, tangerine and oyster shell that have begun to develop appreciable tertiary nuance. On the palate, it's medium to full-bodied, deep and expansive, with a broad attack, incisive acids, a classy mousse and a long, precise and mouthwateringly saline finish. The year 2000 delivered a precocious Dom Pérignon, and this recently disgorged rendition has really benefited from the additional time sur lattes, acquiring notably more complexity—while retaining more energy—than the original disgorgement.
