Masterclass Philippe Pacalet

We are delighted to announce that maverick winemaker Philippe Pacalet will be joining Honest Grapes at 67 Pall Mall on 8th January for an exceptional tasting of his sought after wines from Burgundy and beyond.

This Masterclass will be the opportunity to taste the latest vintage 2018 and special back vintages.

When asked "How long will your wines age?" Philippe Pacalet responds "That depends on how many friends you have!". This sums up Pacalet's refreshingly different approach to creating and enjoying wine. His nuanced take on viticulture and viniculture - using organic, biodynamic and low-intervention practises, without being bound by rigid rules - resounds with the young winemakers making an impact in Burgundy. He is a tremendously gifted winemaker producing wines of incredible freshness, purity, and finesse. He and his wines continue to gain in global status; last year La Revue du Vin de France awarded him the prestigious Negociant of the Year prize. Pacalet purchases carefully selected grapes from organic vineyards of particular interest to him and vinifies them at his own 19th century cellar in the heart of Beaune. He is adamant about including everything to do with the grape, including the stems which he never removes. Unquestionably this means they have to be fully ripe, which demonstrates Pacalet's fastidious commitment to the quality of his wines. He does remove everything from the vinification process that would obscure the expression of terroir, shunning industrial yeasts and using minimal quantities of sulphur, at bottling only. These are elegant, ethereal wines of beautiful purity, to appreciate and enjoy.
