Made from a blend of 60% Blanc de Pinot Noir and 40% of Chardonnay wines from several years, this is a delightful wine that works great not only as an aperitif but also paired with salmon, white meat, and even raspberry cake.

60% Pinot Noir and 40% Chardonnay, 32 reserve wines in this cuvée. ‘It took a lot of time to blend’, says winemaker Corinne Seely. Dosage 7 g/l. Bright, bright lemon yellow. I can smell the chalk. Wildflowers. The smell of thick lemon peel as you slice it with a sharp knife and the oils fill the air. Heady florals build as the wine stands in the glass – like the waxy, heavy white hyacinths on my kitchen table that fill the air when I walk into the kitchen in the early morning. Wet granite rocks after a storm. Lemon bonbon. Sherbet. Such intense lemon on the palate that it tastes as if it is electric current running through citrons turned into chandeliers of citrus crystals catching every blade of light.
