Unlike most of his peers among the top English Sparkling Wine founder/producers, Nick Hall does all of the work himself – from tending the vines through to pressing and winemaking and ultimately bottling, labelling and even dating by hand, working late into the night, listening to Syd Barrett songs on the winery hi-fi, signing off each bottle as he goes.

What to drink with... Crème Brûlée.

This dessert translates to Burnt Cream from the French. This classic dessert is a rich, creamy, vanilla custard topped with caramelised sugar, hardened to a sweet crust. We have a couple of stickies for your delectation: a delicious Muscat de Beaumes de Venise from the Southern Rhône, France or our sweet Italian: l’Ambrosie Verduzzo Friulano. Enjoy!
