Discover Lombardy - Polpettine di Zucchini
Earlier this month, we organised a sumptuous afternoon with food and sparkling wine of Lombardy, in partnership with Consorzio Franciacorta. We were thrilled to have Christine Smallwood there, author of An Appetite for Lombardy, to introduce the participants to the gastronomy of the Northern Italian region. The guests fell in love with the food and photos of the dishes took social media by storm. Inspired by the amazing response, Christine shared two simple yet sophisticated recipes from her book that are quick and easy to make at home.

Polpettine di Zucchini (Courgette Polpettine)
A family recipe from the 1940s that is still popular at Visconti today.
SERVES 4 2 shallots, chopped Extra virgin olive oil, for frying 800g courgettes, finely chopped 100g breadcrumbs 100g Parmesan, grated 2 eggs 8 Amaretti biscuits, finely crumbled Salt, to taste Flour, for dusting Handful of chopped parsley, marjoram and chives
Cook the shallots in oil until soft, then add the courgettes to the pan and cook for 15 minutes.
Leave to drain in a colander and then transfer to a mixing bowl and add the breadcrumbs, Parmesan, eggs, Amaretti and salt to taste.
Mix everything together, form 16 patties and lightly coat in the flour.
Pour enough oil into a non-stick pan to cover the bottom, then heat. Add the patties and brown them on both sides. Once heated through remove and leave to drain on kitchen towel.
Serve hot or cold with a garnish of fresh herbs.
