Taras and Amber Ochata conceived the idea to make super premium wines in their home of South Australia after a surfing trip along the west coast of Mexico in a Volkswagen campervan back in 2000. Taras, an Oenology graduate from Adelaide University with a wealth of experience working alongside renowned winemakers worldwide, uses his expertise to create plush, small batch, single vineyard wines from exceptional sites with a focus on flavour, texture and emotion.
What to drink with... Spaghetti Carbonara.
This Roman dish strictly speaking doesn’t contain cream although the sauce has a creamy feel. The mix of Pancetta (or bacon) garlic, cheese and eggs is great comfort food. Our fruity Castello di Ama Rosato pink pairs well as does our crisp red Rogue Vine Grand Itata Tinto. Fresh whites will go especially well with this dish: New World and Old World Chardonnay, Chenin Blanc, Sauvignon Blanc from Bordeaux or our fab Italian unusual blend of Friulano, Gewürz, Riesling and Sauvignon Blanc.
