Taras and Amber Ochata conceived the idea to make super premium wines in their home of South Australia after a surfing trip along the west coast of Mexico in a Volkswagen campervan back in 2000. Taras, an Oenology graduate from Adelaide University with a wealth of experience working alongside renowned winemakers worldwide, uses his expertise to create plush, small batch, single vineyard wines from exceptional sites with a focus on flavour, texture and emotion.

What to drink with... Caesar salad.

Whole Cos lettuce leaves, crispy croûtons, with a creamy dressing of egg yolk, Parmesan and anchovies. Quite a handful for a glass of wine but a true taste of summer.

We recommend one of our blended whites: the Sicilian Tannu Bianco, Château Unang Blanc from the Rhône, Lavradores de Feitoria Douro Branco from Portugal, or our Castello della Rosa Bianco from Trentino in Northern Italy. If you’re adding a salmon fillet or chicken breast, then pick a Chardonnay or a rosé, e.g. Château Maucoil Côtes du Rhône Villages Rosé or even a Beaujolais.
