"You can count the best Orvieto producers on one hand", claims Eric Guido, and "Castello della Sala undoubtedly ranks among them".

Antinori started producing innovative wines from non-traditional grape varieties (Chardonnay and Sauvignon Blanc) back in the 1980s, under the direction of Marchese Piero Antinori, son of Niccolò, and Renzo Cotarella, Castello della Sala’s enologist at that time.

Cervaro brings a different angle to Chardonnay with a distinctively Umbrian twist: Barrel fermentation provides the structure and richness whilst a small proportion of Grechetto adds freshness and tension. 2018 was a good vintage in Umbria, offering balanced wines with good acidity and ripe fruit. This vintage should have produced a well-structured Cervaro della Sala with the potential to age well.

This cooler vintage prizes finesse and elegance, and those traits are matched by efforts in the winery to accomplish that same goal. On many levels, the 2018 vintage opens a new chapter for Cervaro della Sala, with a stronger emphasis on preserved lemon, crisp pear and crushed mineral. The wine offers beautiful freshness and linearity. I must also mention that this vintage is released while the fruit is still a bit closed or shy. That slightly reductive approach bodes very well for the wine's future evolution."
