Each of Philippe's wines clearly express their terroirs and Colin treats each plot differently. Two-thirds of his 13 hectares are white, the other one-third red.
Philippe uses minimal chemical intervention, relatively low new oak (20-25%) and just a bit of lees stirring during elevage. His Burgundies are seamless – his understanding of expressing terroir is masterful.

"Now just four or five plots, more on the Puligny side. 4 x 500 litres made, with one new barrel. Fine clean and clear, a little perfume partly from the barrel. A properly chiselled Chassagne from white wine terroir. Enough flesh and a nicely crunchy finish. Very nice. Drink from 2024-2027. Tasted: October 2022."
