Shafer’s single-vineyard Carneros Chardonnay is crafted from small-cluster grape clones chosen for their low yields and distinctive flavours. Fermentation occurs in a combination of oak and stainless steel barrels with native yeasts, followed by 14 months of aging on the lees. To preserve its vibrant natural acidity, this Chardonnay does not undergo malolactic fermentation.
The vineyard is named after the Red-shouldered Hawks and other birds of prey that inhabit the area, playing a crucial role in Shafer’s sustainable farming practices.
