Due to warmer climates, Timo sources his Cabernet from Yering, and not his Bloody Hill vineyard. The wine is whole-bunch fermented with wild yeasts. Rich and spicy in style, it has the classic blackcurrant and red berry notes typical of Cabernet with an elegant and fragrant freshness. In Timos own words: Stalky sh*t rocks!
Spicy and stalky, it has the customary black and red berry notes of Cabernet with a perfumed freshness and medium body. Fine-grained tannins are tempered by the influence of some carbonic maceration in the ferment. Winemaker notes
