A peasant dish from the south of France consisting of pork sausages, duck, white beans and a lot of goose fat all cooked slowly to make a rich, succulent casserole.
For a hearty meal, you need a hearty wine. Single varietal or a blend, New World or Old World, opt for your personal preference or experiment with something different, such as a blend of Cabernet Sauvignon, Malbec, Merlot and Petit Verdot (known as a Bordeaux Blend) from Doolhof Cape Boar in Wellington, South Africa or a mix of Carmenère and Merlot from San Leonardo Villa Gresti, Italy.
