Castello di Torre Elephas Bianco
- Lazio, Italy
The winery is located in the medieval village of Torre in Pietra Castle, where the existence of vineyards is documented since the sixteenth century. The cellar – obtained by digging into the tuff hill behind the Castle – was already used in the 1500s for the production and preservation of wine.
Since the beginning of 2000 they have moved to organic farming and are officially certified. "We believe in organic agriculture out of respect for our territory, which we try to express in the most natural and genuine way possible. This means we don’t alter the organoleptic structure of the wine and get the benefits in terms of quality for the wine we produce."
This crisp, dry white from Lazio near Rome comes from cellars carved out of stone over 500 years ago. The elephant on the label signifies the fossils found in the vineyard which is by a Roman road. It’s redolent of citrus, almonds and white peaches on the nose, with a bright, attractive and savoury palate with a hint of salinity that makes it perfect with salads, fish and soft cheeses.
