Fourth generation vine-growers, Bernard Defaix started with 2 ha in 1959. Their vines on the appellation Chablis spread over 12 hectares, situated at the heart of the Chablisian vineyard. The Chablis wine is aged in stainless steel tanks so as to respect the typicity of the appellation and their 2016 Chablis is characterised by their freshness, power and tenacity. The bouquet displays a dominance of mineral notes, which are often associated with delicate touches of citrus fruit (lemon and grapefruit).
