The Hoffmann & Rathbone approach to winemaking is modern but minimalistic. They create their base wines by carefully sourcing and hand-picking only the ripest grapes, which are gently pressed to separate the juice from the skins. The magic in the transformation from grape to sparkling wine is attention to detail and absolute care. The final Cuvée is lovingly and carefully selected from the most promising wines.
Ulrich Hoffmann has been a winemaker and consultant for 15 years, working at the Rolf-Willy estate in BadenWürttemberg, Chateaux de Fieuzal and Haut-Gardére in Bordeaux, Artadi in Navarra, and Cain Vineyards in Napa Valley. These are pure and distinctive wines with real finesse, delicious to drink now but with definite aging potential.
Vegan wines are simply wines made with no animal products. During the winemaking process, sediment is often removed from the wine by filtration and fining agents, some of which are made from casein, a protein found in milk. Winemakers can either choose to use plant-based fining agents, or not to at all, as is the case with some natural wines that take on an unusual cloudy appearance.
