About Bollinger, Special Cuvée Champagne, Nv
“Bollinger? If it’s ’69, you were expecting me.”
Widely acknowledged as one of the world’s finest champagnes, it is no surprise that James Bond is partial to this tipple. Champagne Bollinger has featured in almost every Bond classic, receiving its first mention in the 1956 novel Diamonds Are Forever when Tiffany Case sends a bottle up to Bond’s cabin on the Queen Elizabeth.
Covering 164ha of prized vineyards, Bollinger is one of the few remaining independent family owned Champagne houses. Their distinctive style is the product of rigorous methods and time-honoured traditions passed down through the generations: a symbol of history and expertise.
The Special Cuvée is meticulously crafted from a Pinot Noir dominant blend of harvest grapes and reserve wines. Dry and creamy, the delicate bubbles complement the toasted brioche, honey and rich fruitiness of the wine.
Special Cuvée is designed to be consistent and ready upon release, showing its best immediately with vibrant fruit and fresh acidity. The generous use of reserve wines means it has already developed some secondary complexity, giving it remarkable staying power for a non-vintage champagne. Over the next 2-3 years, the primary fruit will integrate further with the brioche and honeyed notes, becoming rounder and more harmonious. Well-stored bottles can easily hold for 5-7 years from purchase, developing deeper golden colours and more pronounced nutty, biscuity characters, though the trademark freshness will gradually fade.
What the critics say:
"Lovely density and a fine-bubble texture. Dried apple and apricot with hints of dried flowers. Medium to full body. with medium-rich fruit. Spice, zest and ginger character. Usually 10% in barrel. 60% pinot noir, 25% chardonnay and 15% pinot meunier. About 40% reserve wine kept in magnums. Always really well done. Drink now. (July-2023)"
"Like its rosé counterpart, the latest release of Bollinger's NV Brut Special Cuvée is showing especially well, bursting from the glass with aromas of honeyed apples, crisp stone fruit, buttery pastry, ripe lemons and fresh walnuts. Medium to full-bodied, fleshy and vinous, with a deep core of beautifully ripe fruit, racy acids and a pillowy mousse, it's a charming, characterful wine that proves that Special Cuvée is firmly back where it belongs."
Tasting Notes
AppearanceGolden straw with persistent, fine bubbles forming delicate streams.
NoseHoneyed apples and toasted brioche lead, followed by dried stone fruits and fresh walnuts. There's a distinctive richness from the barrel fermentation, with hints of spice and citrus zest adding brightness. The Pinot Noir base gives it weight and presence that many champagnes lack.
PalateMedium to full-bodied with remarkable depth for a non-vintage cuvée. The mousse is creamy rather than sharp, carrying flavours of ripe orchard fruits, honey, and buttery pastry. Racy acidity keeps everything fresh whilst the reserve wine component adds layers of dried fruit and gentle spice. The 40% reserve wine really shows here.
FinishLong and satisfying with lingering notes of ginger, citrus zest, and a mineral backbone that speaks of great terroir.
Overall impressionThis is house champagne elevated to an art form, showing exactly why Bollinger remains the benchmark for Pinot Noir-driven styles.
Food Pairings
In Champagne, this would accompany the region's famous andouillette sausages or boudin blanc with their rich, porky flavours that complement the wine's weight. Local chefs pair it with Chaource cheese, whose creamy texture mirrors the mousse whilst the tang plays against the wine's honeyed notes. Pike from the Marne, simply prepared with butter and herbs, is another classic match, the fish's delicate flesh allowing the champagne's complexity to shine. During harvest season, it's drunk alongside pain de campagne spread with rillettes, the rustic combination perfectly suiting the wine's blend of elegance and earthiness.
We think this wine would go well with
Serve well-chilled at 6-8°C in proper champagne flutes or white wine glasses to appreciate the aromatics. No need to decant, but do open it carefully and pour slowly to preserve the mousse. If you've stored it standing up, give it a few minutes lying down before opening to settle the sediment. The wine benefits from a few minutes in the glass to warm slightly and release its full bouquet.
Bollinger's vineyards stretch across Champagne's finest crus, with significant holdings in the Montagne de Reims and Côte des Blancs. The chalk-rich soils provide excellent drainage whilst retaining moisture during dry spells, crucial for even ripening. Their Pinot Noir thrives on the south-facing slopes around Aÿ, where the combination of chalk subsoil and limestone debris creates wines of exceptional depth and structure. The cool continental climate ensures slow, steady ripening and natural acidity retention.
Champagne operates under strict appellation rules governing everything from permitted grape varieties to riddling techniques. Only Chardonnay, Pinot Noir, and Pinot Meunier are allowed, with yields capped and harvest dates regulated. The méthode champenoise demands second fermentation in bottle, with minimum aging requirements of 15 months on lees for non-vintage cuvées. Bollinger exceeds these minimums significantly, aging their Special Cuvée for three years before release, which explains its remarkable consistency and complexity.
