Optimal drinking window: Now - 2032
Domaine Tollot-Beaut's Bourgogne Côte d'Or blanc is what happens when a respected Burgundy producer applies their village-level expertise to the regional appellation. We find this 2022 Chardonnay captures the essential character of the Côte d'Or's limestone-rich soils whilst offering the accessibility that makes Burgundy lovers out of newcomers.
The wine shows the clean, mineral-driven style that defines modern white Burgundy, with just enough oak to add structure without overwhelming the fruit - the sort of wine that reminds us why Burgundy's regional appellations can be such brilliant value.
Currently showing lovely primary fruit character balanced with subtle oak influence. Over the next 2-3 years, the oak will integrate further whilst developing classic white Burgundy secondary aromatics of hazelnuts and brioche. The wine should reach its peak around 2028-2030, maintaining its freshness whilst gaining complexity.
Tasting Notes
AppearancePale gold with green highlights, crystal clear.
NoseFresh green apple and pear with a thread of citrus zest. There's a lovely mineral quality like wet limestone, plus subtle oak spice that adds complexity without dominating. A hint of white flowers emerges with air.
PalateMedium-bodied with bright acidity that carries flavours of crisp apple, lemon, and stone fruit. The oak integration is seamless, adding texture rather than flavour, whilst the limestone minerality provides a clean, chalky backbone. Good concentration without heaviness.
FinishClean and persistent with lingering citrus and mineral notes.
Overall impressionClassic white Burgundy character at regional level pricing.
Food Pairings
In Burgundy, this would be the natural partner for escargots de Bourgogne, the garlic and parsley butter finding perfect balance with the wine's acidity and subtle oak. Locals would also reach for it with pike quenelles in cream sauce, coq au vin blanc, or the region's excellent goat cheeses like Chaource. The wine's minerality makes it ideal with freshwater fish from the Saône, simply prepared to let both wine and fish shine.
We think this wine would go well with
Serve at 10-12°C in a standard white wine glass or small Burgundy bowl. No need to decant, but do let it warm slightly in the glass to reveal its full aromatics. Open 30 minutes before serving to allow the wine to express itself fully.
The grapes come from scattered parcels across the Côte d'Or, primarily from vineyards on the eastern-facing slopes between Nuits-Saint-Georges and Beaune. The soils are classic Burgundian limestone and marl, providing the mineral backbone that defines the region's white wines. The blend of sites gives the wine both the freshness of the Côte de Nuits and the roundness of the Côte de Beaune.
Bourgogne Côte d'Or was created in 2017 to distinguish wines from the prestigious Côte d'Or from the broader Bourgogne appellation. The rules restrict grape sources to vineyards between Dijon and Maranges, ensuring the wines capture the limestone-driven character that makes this stretch of Burgundy so special. It sits between basic Bourgogne and village-level appellations, offering genuine Côte d'Or character at a more accessible price.
The 2022 growing season in Burgundy began with a worryingly dry spring that had vignerons checking soil moisture levels weekly, followed by a summer that alternated between intense heat and welcome rainfall. The vines handled the stress remarkably well, producing smaller berries with concentrated flavours, though yields dropped significantly across both the Côte d'Or and Chablis. Harvest began earlier than usual, with many producers picking in late August under bright skies.
What emerged from the cellars shows a vintage of surprising finesse given the challenging conditions. The Pinot Noirs display vivid fruit and firm tannins without the jammy weight you might expect from a hot year, whilst the Chardonnays retained their mineral backbone alongside ripe stone fruit flavours. We're finding the village-level wines particularly compelling right now, drinking beautifully with just a year or two of bottle age, though the premier and grand crus will reward patience until the late 2020s.
