Optimal drinking window: Now - 2032
Light, fine and harmonious, the Brut Réserve is a blend from three different years and sourced from the best sites in the Champagne region. The nose combines charming white and red fruits, whilst the palate is wonderfully fresh and forward, with some complex toasty notes from the lees aging.
The champagnes of Maison Billecart-Salmon are revered around the world, and the majority of the grapes for the Brut Réserve come from a radius of 20km around Epernay, famed for its Grand Cru Pinot Noir, Pinot Meunier and Chardonnay.
"Highly aromatic and delicate, the nose has lovely red and orchard fruits, whilst the palate is wonderfully fresh and elegant, with some stony minerality. A benchmark Brut from Billecart-Salmon"
Our note
This is Champagne designed for immediate pleasure rather than long-term cellaring, showing beautifully now with all its fruit and freshness intact. Over the next year or two, you might see the fruit integrate further and the toasty lees character become more prominent, but the essential character will remain unchanged. By 2032, the wine will still be perfectly drinkable but may begin to lose some of its youthful vibrancy. The beauty of non-vintage Champagne lies in its consistency and readiness to drink, so we'd recommend enjoying this sooner rather than later to capture its intended style.
What the critics say:
"The Billecart-Salmon NV Brut Réserve is a blend of 40% Pinot Meunier (sourced in the Vallée de la Marne and the Coteaux Sud d'Epernay), 30% Chardonnay (from different villages along the Marne) and 30% Pinot Noir (from the Montagne de Reims and the Grande Vallée de la Marne). The recent disgorgement from January 2018 is straw-yellow in color and based 40% on the 2015 harvest, with 60% of reserve wines. The result is a light and delicately fruity flavored cuvée with aromatic and spicy Pinot Meunier and redcurrant aromas intertwined with chalky expressions and notes of ripe pears and yeast. Round and fresh on the palate, this is a light, finessed, elegant, very delicate and harmoniously fruity Brut with a stunningly intense, persistent, well-structured and purely salty finish. Very stimulating as a soloist, aperitif or with lighter dishes."
Tasting Notes
AppearancePale straw-yellow with persistent, fine bubbles forming delicate streams.
NoseCharming aromatics of redcurrant and ripe pear intertwined with chalky minerality and subtle spice from the Pinot Meunier. There's a lovely freshness here, with delicate yeast notes adding complexity without overwhelming the fruit. The overall impression is one of elegance and restraint.
PalateLight and refined on entry, with beautiful freshness and forward fruit character. The red and orchard fruits carry through from the nose, supported by that distinctive chalky backbone and some appealing toasty notes from lees ageing. The mousse is particularly fine and well-integrated, adding texture without weight.
FinishStunningly pure and salty, with impressive persistence and mineral intensity that leaves you reaching for another sip.
Overall impressionA benchmark non-vintage Champagne that perfectly captures Billecart-Salmon's house style of finesse and harmony.
Food Pairings
In Champagne, this would be the natural partner to the region's famous oysters from nearby Arcachon, served simply with a squeeze of lemon. Locals might also enjoy it with escargots de Bourgogne, the rich garlic and herb butter contrasting beautifully with the wine's mineral freshness. Traditional charcuterie from the Ardennes, particularly jambon de Reims, makes another classic pairing, whilst the region's soft cow's milk cheeses like Chaource provide a creamy counterpoint to the wine's acidity. For a truly regional experience, try it with gougères, those light cheese puffs that seem made for Champagne's delicate bubbles.
We think this wine would go well with
Serve well-chilled at 6-8°C in proper Champagne flutes to concentrate the aromatics and show off those fine bubbles. No need to decant, but do open just before serving to preserve the mousse. If you're feeling generous with your glassware, white wine glasses work beautifully too, giving the wine more room to express its complexity. Store bottles on their side in a cool, dark place, and once opened, finish within a day or two for best results.
The grapes come from a carefully selected 20km radius around Épernay, taking advantage of the region's three key terroirs. Pinot Meunier from the Vallée de la Marne brings fruit and approachability, Chardonnay from various villages along the Marne provides elegance and minerality, whilst Pinot Noir from the Montagne de Reims and Grande Vallée adds structure and complexity. The chalky soils impart the characteristic mineral backbone that defines great Champagne, whilst the cool climate preserves the essential acidity.
Champagne AOC is the world's most prestigious sparkling wine appellation, where strict regulations govern everything from grape varieties to pressing methods. Only Chardonnay, Pinot Noir, and Pinot Meunier are permitted, and the traditional method of secondary fermentation in bottle is mandatory. The region's cool climate and chalky soils create ideal conditions for producing wines with the acidity and complexity needed for this demanding process. Non-vintage blends like this one showcase the house style through careful blending across multiple years.

When should I drink this Champagne?
It's drinking beautifully right now and will continue to please until around 2030, though we'd recommend enjoying it sooner rather than later to capture its youthful freshness and vibrant fruit character.

Oysters are the classic match, but it's equally lovely with light canapés, smoked salmon, or simply as an aperitif. The mineral freshness makes it particularly good with shellfish and lighter fish dishes.

Billecart-Salmon is renowned for their house style of finesse and elegance, and this Brut Réserve perfectly captures that approach. It's lighter and more delicate than many grandes marques, with exceptional purity and mineral character.
