"Deep dark ruby garnet, opaque core, violet reflections, delicate rim brightening. Ripe black cherries, fine cassis, a hint of precious wood, delicate nougat, tobacco nuances, inviting bouquet. Taut, tightly woven, ripe cherry fruit, extract-sweet texture, fine tannins, freshly structured, mineral-lemon nuances on the finish, shows energy and length, sure maturity potential."
"Silky, aromatic and layered in the glass, the 2025 Pichon Baron is a total stunner. What a wine. Sweet red cherry/plum fruit, blood orange and rose petal are some of the many notes that caress the palate. Hints of pomegranate, mint and exotic spice appear later, adding layers of nuance. The wine's striking mid-palate sweetness and overall balance are the stuff dreams are made of. This is exquisite. Yields were just 24 hectoliters per hectare. The 2025 is expected to spend 18 months in French oak, 70% new."

The 73-hectare vineyard sits on classic Pauillac gravel beds, with deep Günzian gravel over clay and limestone subsoils that provide excellent drainage whilst retaining moisture during dry periods. These south-facing slopes directly face Château Latour across the Gironde, benefiting from the same maritime influence that moderates temperatures. The terroir's natural drainage and heat retention create ideal conditions for late-ripening Cabernet Sauvignon, whilst pockets of clay support the Merlot plantings that add flesh to the final blend.
Pauillac represents the heart of the Médoc's aristocracy, home to three first growths and producing wines of uncompromising power and longevity. The appellation's strict rules mandate specific grape varieties and minimum alcohol levels, but it's the commune's unique terroir of deep gravel beds that truly defines its character. Pauillac wines are built for the long term, typically requiring a decade or more to show their true personality, and can age gracefully for half a century or more when from the finest estates.
The 2025 Bordeaux vintage emerged from one of the most demanding growing seasons in recent memory — the earliest budbreak since 1989, June temperatures second only to 2003 since records began, and an unusually early harvest beginning in August for the whites. Conditions that should have produced heavy, overripe wines. They didn't. Decanter's Georgie Hindle, who tasted close to 200 wines ahead of the formal campaign, describes "exceptional concentration, aromatic purity and a freshness that contradicts the record-breaking heat.
The early critical consensus places 2025 stylistically between the precision of 2020 and the structure of 2016, with the brightness of 2023 — a combination that suggests a very serious vintage indeed. Yields are dramatically low, the smallest crop since 1991, with production across the Gironde running around 15% below the five-year average. The quality is here. There simply isn't very much of it.
