Optimal drinking window: 2026 - 2032

Domaine Tollot-Beaut's Bourgogne Côte d'Or blanc offers a glimpse into their house style without the village-level price tag. This 2023 shows the domaine's careful touch with Chardonnay, balancing fruit purity with judicious oak handling across their Côte d'Or holdings.

We find this an excellent entry point into the Tollot-Beaut approach: clean, mineral-driven, and built around orchard fruit rather than tropical exuberance.

Currently showing primary fruit character with well-integrated oak, this 2023 is drinking beautifully now but will reward short-term cellaring. Over the next 12-18 months, expect the oak to marry more completely with the fruit, while subtle secondary notes of brioche and honey begin to emerge. The wine should reach its peak between 2028-2032, when primary fruit and secondary complexity achieve perfect balance.

Tasting Notes

AppearancePale gold with green highlights and excellent clarity.

NoseGreen apple and pear lead, followed by subtle vanilla oak and wet limestone. There's a clean, mineral thread running through the fruit that speaks to careful handling. Light honeyed nuances emerge with air.

PalateMedium-bodied with excellent balance between fruit and acidity. The oak integration is seamless, supporting rather than dominating the orchard fruit core. Mineral tension builds through the mid-palate, adding structure without heaviness.

FinishClean and persistent with chalky minerality and a hint of citrus zest.

Overall impressionA well-crafted white Burgundy that delivers classic character at an accessible level.

Food Pairings

In Burgundy, this style of Chardonnay pairs naturally with the region's river fish, particularly pike-perch from the Saône served with beurre blanc. Local chefs would match it with escargots de Bourgogne, where the wine's acidity cuts through the garlic butter, or with a classic coq au vin blanc. The wine also complements Chaource cheese, whose creamy texture and slight tang echo the wine's balance of richness and freshness.
