Hermitage Cognacs are renowned for their knowledge and supply of older cognacs. Their cognacs spend far longer in the barrels than average and this alone provides deeper, richer and more individual flavours. Most of the cognacs come from the top cru known as Grande Champagne.
The range of Hermitage Cognacs changes as and when old vintages run out or new ones are added. Although there are many vintages available, only the very finest are selected for sale under the Hermitage label.
Produced in the Grande Champagne, many of its gentle slopes contain Campanian chalk named after the Latin original of the word that became Champagne. This allows the vine roots to travel far into the ground to find water.
There are many exciting aromas of cherrywood, bletted medlars, banana, liquorice, ripe pineapple and dried figs. There are many wonderful complex flavours in this beautifully balanced cognac. Initially one can detect green walnuts and brazil nuts but one can also detect flavours of turmeric, cherry, liquorice, dried figs, cocoa and madeira wine all of which complement the rich rancio obtained from long cask ageing.
Distilled in 15 hectolitre stills, this was almost certainly distilled on an old traditional wood burning still where the distiller would have slept in the distillery
No water added, natural reduction.
Many of the cellars in the region are old and have natural floors sometimes just made of the earth they were built on. This creates the ideal situation for long ageing. This was aged in oak casks for more than 70 years.
