Bibi Graetz is one of Tuscany’s true originals. A painter-turned-winemaker whose work on the hillsides above Florence has redefined what modern Tuscan wine can be. For nearly two decades, he’s been crafting Testamatta ('crazy head') from old-vine Sangiovese scattered across Chianti Classico’s highest, most characterful sites.
After the first wave of Supertuscans, Sassicaia, Tignanello and their kin, Bibi represents the next generation of pioneers: less about Bordeaux blends, more about rediscovering Tuscany’s native voice. His vineyards, populated by gnarled fifty- to eighty-year-old vines, yield fruit of remarkable concentration and depth.
Testamatta is assembled like a mosaic; parcels from differing altitudes, exposures and soils, each contributing a fragment of colour and texture. Fermentation is spontaneous, ageing largely in used oak to preserve purity, and the result is a wine that seems to shimmer with energy rather than weight.

"A wild nose, savoury and darkly fruited. Some earthy scents - soy, iodine and tobacco. So seductively pure and delicious. Easy to drink with a clarity and concentration that is perfectly balanced. Sumptuous, filling and deep with fleshy tannins that give such excellent width and scope to the wine but keeping a direct core from start to finish. Orange rind, dried herbs, pumice stone and cumin. Deliciously lifted and effortless but charming and smiley too. I could drink this all day. What a wonderful wine. Joyous and moreish with incredible sapidity and mouthwatering acidity. What more could you want?! Lovely minerality on the finish too, salty stones, cola and chalk. Effortless."
